Corn Fritters

2 cups sweet corn kernels

1  cup flour

1/4 cup white sugar

1 teaspoon baking powder

1/2 teaspoon salt

2 eggs

oil ( corn or sunflower) for frying

First blend the corn kernels until a smooth pulp. Beat the eggs and mix with corn pulp. In another bowl mix the flour, salt and baking powder and then slowly add to corn egg mix until well mixed. Set the bowl aside to sit for 1 hour.  Bubbles should form in the mix. Heat the oil in a deep pan. Fry small spoons of the corn mix into the hot oil until golden brown. Drain on paper towel and then keep warm in a very low oven until the whole batch is fried. Enjoy with a cold beer.
