Southern style Biscuits

2 cups plus 4 tablespoons flour

2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

5 large tablespoons pork lard

1 cup buttermilk ( if you can’t find it substitute 1 cup of whole milk with 1 tablespoon apple cider vinegar. let is sit 2 minuutes)

Preheat oven to 500F/250C

Mix the flour, baking soda and powder, and salt in a bowl. Add 3 tablespoons of the lard and with finger tips rub the lard into flour creating a crumbly texture. Pour in the milk and mix gently with fork. Do not over mix.

Using a cast iron pan add the remaing 2 tablespoons of lard to pan and place in oven for 5 minutes, until the pan and lard are very hot.

Carefully remove pan and drop in batter ( it will be wet) placing each drop of batter close enough to touch. Then return to oven to bake for 10 minutes or until a golden brown. they are best when eaten warm.
